A rich and savory West African peanut stew, perfect for a comforting meal.
Ingredients

- 1 tbsp vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 thumb-sized piece of ginger, grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cayenne pepper (or to taste)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 4 cups vegetable broth
- 1/2 cup smooth peanut butter
- 1 lb sweet potatoes, peeled and cubed
- 1 lb chicken thighs, cut into bite-sized pieces (optional)
- 1 (15 ounce) can chickpeas, rinsed and drained
- Salt and pepper to taste
- Fresh cilantro, chopped, for garnish
Instructions
- Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and grated ginger. Cook for 1 minute more until fragrant.
- Stir in the ground cumin, ground coriander, and cayenne pepper. Cook for 30 seconds, stirring constantly.
- Pour in the diced tomatoes and vegetable broth. Bring to a simmer.
- In a small bowl, whisk the peanut butter with a little of the hot broth until smooth. Stir the thinned peanut butter into the pot.
- Add the cubed sweet potatoes. If using chicken, add it now. Bring the stew back to a simmer, then reduce heat, cover, and cook for 20-25 minutes, or until the sweet potatoes are tender and the chicken is cooked through.
- Stir in the rinsed and drained chickpeas. Cook for another 5 minutes to heat through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- For a vegetarian/vegan option, omit the chicken.
- Adjust cayenne pepper for desired spice level.
- Serve with rice or flatbread.
