Description

A hearty and flavorful vegan burrito filled with seasoned black beans, rice, salsa, and fresh vegetables.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1/2 cup cooked rice
  • 1/4 cup salsa
  • 4 large whole wheat tortillas
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: avocado, vegan sour cream, shredded lettuce

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic, chili powder, cumin, and smoked paprika. Cook for 1 minute until fragrant.
  4. Stir in black beans and cooked rice. Cook for 5 minutes, mashing some of the beans.
  5. Remove from heat and stir in salsa and cilantro.
  6. Warm tortillas according to package directions.
  7. Spoon the bean mixture into the center of each tortilla.
  8. Add optional toppings as desired.
  9. Fold in the sides of the tortilla and then roll up from the bottom to create a burrito.

Notes

  • For spicier burritos, add a pinch of cayenne pepper.
  • You can prepare the bean mixture ahead of time and refrigerate.
  • Use your favorite type of rice, such as brown rice or quinoa.
