- 1 pound elbow macaroni
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 4 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 4 cups shredded cheddar cheese
- 2 cups shredded Gruyère cheese
- 2 tablespoons truffle oil
- 1/4 cup grated Parmesan cheese
Instructions
- Cook macaroni according to package directions. Drain and set aside.
- In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
- Stir in salt, pepper, and nutmeg.
- Remove from heat. Add cheddar and Gruyère cheeses, stirring until melted and smooth.
- Stir in truffle oil.
- Add cooked macaroni to the cheese sauce and stir to combine.
- Pour into a baking dish. Sprinkle with Parmesan cheese.
- Bake at 375°F (190°C) for 20-25 minutes, or until bubbly and golden brown.
Notes
- For extra richness, add a splash of heavy cream to the sauce.
- Freshly grated nutmeg offers the best flavor.
- Adjust truffle oil to your preference.
