- 2 tablespoons chopped cilantro

- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 2 tablespoons water
Instructions
- In a large bowl, combine the shredded chicken, red bell pepper, cucumber, carrots, and cilantro.
- In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, ginger, garlic, and water until smooth.
- Pour the dressing over the salad ingredients and toss to combine.
- Garnish with chopped peanuts before serving.
Notes
- You can adjust the spice level by adding a pinch of red pepper flakes to the dressing.
- For a vegetarian option, omit the chicken and add extra vegetables or tofu.
