- 1/4 cup cornstarch
- 1 teaspoon baking powder

- 1/4 cup milk
- 1 large egg
- 2 tablespoons melted butter
- Vegetable oil for frying
Instructions
- In a large bowl, combine the corn kernels, flour, cornstarch, baking powder, salt, and pepper.
- In a separate bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Heat about 1 inch of vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of a spoon.
- Cook for 2-3 minutes per side, or until golden brown and cooked through.
- Remove the fritters from the oil and place them on a plate lined with paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
Notes
- For extra flavor, you can add a pinch of cayenne pepper or chopped fresh chives to the batter.
- If using frozen corn, make sure to thaw and drain it thoroughly before using.
