Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 1 head butter lettuce, leaves separated
  • 1/4 cup chopped peanuts
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. In a medium bowl, whisk together soy sauce, sriracha, rice vinegar, sesame oil, garlic, and ginger.
  2. Add shrimp to the marinade and toss to coat. Let marinate for 10 minutes.
  3. Heat a large skillet or grill pan over medium-high heat.
  4. Add shrimp to the hot skillet and cook for 2-3 minutes per side, until pink and cooked through.
  5. Spoon the cooked shrimp into the lettuce leaves.
  6. Top with chopped peanuts and cilantro.
  7. Serve immediately with lime wedges.
