- 1 pound large shrimp, peeled and deveined
- 2 tablespoons soy sauce
- 1 tablespoon sriracha
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1/2 teaspoon grated fresh ginger
- 1 head butter lettuce, leaves separated
- 1/4 cup chopped peanuts
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- In a medium bowl, whisk together soy sauce, sriracha, rice vinegar, sesame oil, garlic, and ginger.
- Add shrimp to the marinade and toss to coat. Let marinate for 10 minutes.
- Heat a large skillet or grill pan over medium-high heat.
- Add shrimp to the hot skillet and cook for 2-3 minutes per side, until pink and cooked through.
- Spoon the cooked shrimp into the lettuce leaves.
- Top with chopped peanuts and cilantro.
- Serve immediately with lime wedges.
Notes
- For extra spice, add more sriracha to the marinade.
- You can substitute chicken or tofu for shrimp.
- Add shredded carrots or cucumber for extra crunch.
