Ingredients
- Udon noodles: 8 oz
- Miso paste: 2 tbsp
- Soy sauce: 1 tbsp
- Sesame oil: 1 tsp
- Chili garlic sauce: 1 tsp (or to taste)
- Vegetable broth: 4 cups
- Tofu, cubed: 4 oz
- Scallions, sliced: for garnish
- Nori seaweed, shredded: for garnish
Instructions
- Cook udon noodles according to package directions.
- Whisk together miso paste, soy sauce, sesame oil, and chili garlic sauce.
- Heat vegetable broth in a pot.
- Add miso mixture to the broth. Stir to combine.
- Add tofu and cook for 5 minutes.
- Add cooked udon noodles to the broth.
- Serve hot. Garnish with scallions and nori.
Notes
- Adjust chili garlic sauce to your spice preference.
- Other vegetables like mushrooms or spinach can be added.
- For a richer flavor, use dashi instead of vegetable broth.
