  • Tofu, cubed: 4 oz

Instructions

  1. Cook udon noodles according to package directions.
  2. Whisk together miso paste, soy sauce, sesame oil, and chili garlic sauce.
  3. Heat vegetable broth in a pot.
  4. Add miso mixture to the broth. Stir to combine.
  5. Add tofu and cook for 5 minutes.
  6. Add cooked udon noodles to the broth.
  7. Serve hot. Garnish with scallions and nori.
