Ingredients

- 4 oz spaghetti
- 2 large egg yolks
- 1/4 cup grated Parmesan cheese
- 2 tbsp miso paste
- 1 tbsp chili garlic sauce
- 2 oz pancetta, diced
- 1 clove garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 tbsp pasta water
Instructions
- Cook spaghetti according to package directions. Reserve pasta water.
- While pasta cooks, whisk together egg yolks, Parmesan cheese, miso paste, and chili garlic sauce in a bowl.
- In a pan, sauté pancetta in olive oil until crispy. Add garlic and cook until fragrant.
- Drain pasta and add it to the pan with pancetta.
- Remove from heat and pour egg mixture over pasta. Toss quickly, adding pasta water as needed to create a creamy sauce.
- Season with salt and pepper. Serve immediately.

- Adjust the amount of chili garlic sauce to your spice preference.
- Ensure pasta is hot when adding the egg mixture to cook the eggs properly.
- Garnish with extra Parmesan cheese or chopped green onions.
