A fusion dish combining Italian carbonara with Japanese miso and chili for a spicy, savory flavor.


Ingredients

  • 4 oz spaghetti
  • 2 large egg yolks
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp miso paste
  • 1 tbsp chili garlic sauce
  • 2 oz pancetta, diced
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp pasta water

Instructions

  1. Cook spaghetti according to package directions. Reserve pasta water.
  2. While pasta cooks, whisk together egg yolks, Parmesan cheese, miso paste, and chili garlic sauce in a bowl.
  3. In a pan, sauté pancetta in olive oil until crispy. Add garlic and cook until fragrant.
  4. Drain pasta and add it to the pan with pancetta.
  5. Remove from heat and pour egg mixture over pasta. Toss quickly, adding pasta water as needed to create a creamy sauce.
  6. Season with salt and pepper. Serve immediately.

  • Ensure pasta is hot when adding the egg mixture to cook the eggs properly.
