Ingredients

  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1/4 cup chopped red onion
  • 1/4 cup chopped celery
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sriracha or hot sauce
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 4 large whole wheat tortillas
  • Lettuce leaves
  • Tomato slices

Instructions

  1. Mash chickpeas in a bowl with a fork until mostly broken down.
  2. Add red onion, celery, mayonnaise, Dijon mustard, sriracha, and cumin. Stir to combine.
  3. Season with salt and pepper.
  4. Divide the chickpea mixture among the four tortillas.
  5. Top with lettuce leaves and tomato slices.
  6. Fold in the sides of the tortillas and roll them up tightly.
