Ingredients

- 1 can (15 ounces) chickpeas, rinsed and drained
- 1/4 cup chopped red onion
- 1/4 cup chopped celery
- 2 tablespoons mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon sriracha or hot sauce
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 4 large whole wheat tortillas
- Lettuce leaves
- Tomato slices
Instructions
- Mash chickpeas in a bowl with a fork until mostly broken down.
- Add red onion, celery, mayonnaise, Dijon mustard, sriracha, and cumin. Stir to combine.
- Season with salt and pepper.
- Divide the chickpea mixture among the four tortillas.
- Top with lettuce leaves and tomato slices.
- Fold in the sides of the tortillas and roll them up tightly.
Notes
- For a vegan option, use vegan mayonnaise.
- Adjust sriracha amount for desired spice level.
- Add other vegetables like bell peppers or shredded carrots.
