  • 12 corn tortillas
  • Toppings: shredded lettuce, diced tomatoes, sour cream, salsa, shredded cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Boil potatoes until fork-tender, about 15-20 minutes.
  3. Drain potatoes and let them cool slightly.
  4. Place potatoes on a baking sheet lined with parchment paper.
  5. Smash each potato with a fork or potato masher.
