Description
A quick and healthy twist on fried rice, this Shrimp Fried Quinoa uses fluffy quinoa instead of rice for a protein-packed and flavorful meal. It’s perfect for a weeknight dinner.
Ingredients
Scale
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1 tablespoon olive oil
- 1 pound shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1 cup mixed vegetables (peas, carrots, corn), frozen or fresh
- 2 large eggs, lightly beaten
- 2 tablespoons soy sauce or tamari
- 1 teaspoon sesame oil
- Salt and pepper to taste
Instructions
- Cook quinoa: Combine rinsed quinoa and water/broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until liquid is absorbed. Let stand for 5 minutes, then fluff with a fork.
- Cook shrimp: Heat olive oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Cook vegetables and garlic: Add mixed vegetables and minced garlic to the same skillet. Stir-fry for 3-5 minutes until tender-crisp.
- Scramble eggs: Push vegetables to one side of the skillet. Pour beaten eggs into the empty side and scramble until cooked.
- Combine: Add cooked quinoa, cooked shrimp, soy sauce, and sesame oil to the skillet. Stir everything together until well combined and heated through.
- Season: Season with salt and pepper to taste.
Notes
- For extra flavor, add a pinch of red pepper flakes with the garlic.
- You can substitute chicken or tofu for shrimp.
- Chop any leftover vegetables you have on hand and add them to the stir-fry.
