Ingredients

- 1 pound boneless, skinless chicken breasts
- 1 cup chicken broth
- 1 packet taco seasoning
- 8 small corn tortillas
- 1/2 cup chopped onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice
- Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa
Instructions
- Place chicken breasts in a slow cooker.
- Add chicken broth and taco seasoning.
- Cook on high for 2-3 hours or on low for 4-6 hours, until chicken is cooked through and tender.
- Remove chicken from slow cooker and shred with two forks.
- Return shredded chicken to the slow cooker and stir to coat with the liquid.
- Warm tortillas according to package directions.
- Fill tortillas with shredded chicken.
- Top with onion, cilantro, lime juice, and your favorite toppings.
Notes
- For spicier tacos, add a pinch of cayenne pepper to the taco seasoning.
- You can also cook the chicken in a pot on the stovetop by simmering in broth until cooked through, then shredding.
