Description

Easy and flavorful shredded chicken tacos perfect for a quick weeknight meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup chicken broth
  • 1 packet taco seasoning
  • 8 small corn tortillas
  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa

Instructions

  1. Place chicken breasts in a slow cooker.
  2. Add chicken broth and taco seasoning.
  3. Cook on high for 2-3 hours or on low for 4-6 hours, until chicken is cooked through and tender.
  4. Remove chicken from slow cooker and shred with two forks.
  5. Return shredded chicken to the slow cooker and stir to coat with the liquid.
  6. Warm tortillas according to package directions.
  7. Fill tortillas with shredded chicken.
  8. Top with onion, cilantro, lime juice, and your favorite toppings.

Notes

  • For spicier tacos, add a pinch of cayenne pepper to the taco seasoning.
  • You can also cook the chicken in a pot on the stovetop by simmering in broth until cooked through, then shredding.
