- 1 pound chicken breast, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 tablespoon olive oil
- 1 packet fajita seasoning
- Tortillas, for serving
- Optional toppings: salsa, sour cream, guacamole
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss chicken, bell pepper, and onion with olive oil and fajita seasoning.
- Spread mixture in a single layer on a sheet pan.
- Bake for 20-25 minutes, or until chicken is cooked through and vegetables are tender.
- Serve immediately in tortillas with your favorite toppings.
Notes
- You can use any color bell pepper you like.
- Feel free to add other vegetables, such as zucchini or mushrooms.
- For spicier fajitas, add a pinch of cayenne pepper to the seasoning.
