Ingredients

  • 1/2 cup rolled oats
  • 1 cup water or broth
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1/4 cup chopped mushrooms
  • 1 tablespoon soy sauce
  • Black pepper to taste

Instructions

  1. Combine oats, water or broth, and salt in a saucepan.
  2. Bring to a boil, then reduce heat and simmer for 5-7 minutes, or until oats are cooked and liquid is absorbed.
  3. While oats are cooking, heat olive oil in a skillet over medium heat.
  4. Add onion and cook until softened, about 3-4 minutes.
  5. Add garlic and mushrooms and cook for another 3-5 minutes, until mushrooms are browned.
  6. Stir in soy sauce.
  7. Add the cooked oats to the skillet with the vegetables.
  8. Stir well to combine.
  9. Season with black pepper to taste.
