- 1 tablespoon vegetable oil
- 1 cup cooked jasmine rice, chilled
- 1/2 cup diced fresh pineapple
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper
- 1/4 cup diced cooked chicken or shrimp (optional)
- 1 tablespoon soy sauce
- 1 teaspoon fish sauce
- 1/2 teaspoon curry powder
- 1/4 teaspoon sugar
- 2 tablespoons chopped fresh cilantro, for garnish
- 2 tablespoons chopped peanuts, for garnish
Instructions
- Heat vegetable oil in a wok or large skillet over medium-high heat.
- Add onion and red bell pepper, and stir-fry for 2 minutes until softened.
- Add cooked rice, pineapple, and protein (if using). Stir-fry for 3-4 minutes until heated through.
- In a small bowl, whisk together soy sauce, fish sauce, curry powder, and sugar.
- Pour the sauce over the rice mixture and toss to combine. Cook for another 1-2 minutes until the sauce is absorbed.
- Garnish with cilantro and peanuts before serving.
Notes
- For best results, use day-old, chilled rice.
- Adjust seasoning to your taste.
- Feel free to add other vegetables like peas or carrots.
