Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup cooked jasmine rice, chilled
  • 1/2 cup diced fresh pineapple
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced cooked chicken or shrimp (optional)
  • 1 tablespoon soy sauce
  • 1 teaspoon fish sauce
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon sugar
  • 2 tablespoons chopped fresh cilantro, for garnish
  • 2 tablespoons chopped peanuts, for garnish

Instructions

  1. Heat vegetable oil in a wok or large skillet over medium-high heat.
  2. Add onion and red bell pepper, and stir-fry for 2 minutes until softened.
  3. Add cooked rice, pineapple, and protein (if using). Stir-fry for 3-4 minutes until heated through.
  4. In a small bowl, whisk together soy sauce, fish sauce, curry powder, and sugar.
  5. Pour the sauce over the rice mixture and toss to combine. Cook for another 1-2 minutes until the sauce is absorbed.
  6. Garnish with cilantro and peanuts before serving.

Notes

  • For best results, use day-old, chilled rice.
  • Adjust seasoning to your taste.
  • Feel free to add other vegetables like peas or carrots.
