Ingredients

  • 24 Oreo cookies, divided
  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream

Instructions

  1. Preheat your oven to 325°F (160°C). Line a mini muffin tin with paper liners.
  2. Crush 20 Oreo cookies into fine crumbs.
  3. In a bowl, beat cream cheese and sugar until smooth.
  4. Beat in vanilla extract and eggs one at a time until just combined.
  5. Stir in sour cream until the batter is smooth.
  6. Fold in the crushed Oreo crumbs.
  7. Spoon the batter evenly into the prepared mini muffin cups, filling each about two-thirds full.
  8. Crumble the remaining 4 Oreo cookies and sprinkle them over the tops of the cheesecakes.
  9. Bake for 15-18 minutes, or until the edges are set and the centers are still slightly soft.
  10. Let cool completely in the muffin tin before transferring to a plate.
  11. Chill for at least 1 hour before serving.
