- 24 Oreo cookies, divided
- 8 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup sour cream
Instructions
- Preheat your oven to 325°F (160°C). Line a mini muffin tin with paper liners.
- Crush 20 Oreo cookies into fine crumbs.
- In a bowl, beat cream cheese and sugar until smooth.
- Beat in vanilla extract and eggs one at a time until just combined.
- Stir in sour cream until the batter is smooth.
- Fold in the crushed Oreo crumbs.
- Spoon the batter evenly into the prepared mini muffin cups, filling each about two-thirds full.
- Crumble the remaining 4 Oreo cookies and sprinkle them over the tops of the cheesecakes.
- Bake for 15-18 minutes, or until the edges are set and the centers are still slightly soft.
- Let cool completely in the muffin tin before transferring to a plate.
- Chill for at least 1 hour before serving.
Notes
- For an extra chocolatey flavor, use chocolate cream cheese.
- You can add a drizzle of chocolate ganache before serving.
