Ingredients

  • 4 ounces unsweetened chocolate, chopped
  • 1 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup packed light brown sugar
  • 1/4 cup white miso paste
  • 1/4 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Melt 1 cup butter and unsweetened chocolate in a heatproof bowl over a saucepan of simmering water. Stir until smooth. Remove from heat.
  3. Whisk in granulated sugar.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. In a separate bowl, whisk together flour and salt.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  7. Spread half of the batter into the prepared pan.
  8. To make the caramel: Melt 1/2 cup butter in a saucepan over medium heat. Stir in brown sugar and miso paste until smooth.
  9. Bring to a simmer and cook for 2 minutes, stirring constantly.
  10. Stir in heavy cream.
  11. Drizzle half of the miso caramel over the batter in the pan.
  12. Spread the remaining batter over the caramel.
  13. Drizzle the rest of the caramel over the top.
  14. Swirl gently with a knife.
  15. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  16. Let cool completely before cutting.

Notes

  • For a fudgier brownie, bake for less time.
  • For a cakier brownie, bake for a few extra minutes.
  • Ensure miso paste is smooth before adding to caramel.
