- 8 ounces elbow macaroni
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 3 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 cups shredded cheddar cheese
- 1 cup shredded Gruyere cheese
Instructions
- Cook macaroni according to package directions. Drain.
- Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly, until thickened.
- Remove from heat. Stir in salt, pepper, paprika, cheddar cheese, and Gruyere cheese until melted and smooth.
- Add drained macaroni to the cheese sauce and stir to combine.
- Serve immediately.
Notes
- For a crispier topping, you can add breadcrumbs to the top before baking.
- Feel free to experiment with different types of cheese.
