Ingredients
- Spinach: 2 cups
- Avocado: 1 ripe
- Plain Greek Yogurt: 1/4 cup
- Lemon Juice: 1 tablespoon
- Garlic: 1 clove
- Fresh Herbs (parsley, chives, basil): 1/4 cup, chopped
- Salt and Pepper: to taste
- Whole Wheat Tortillas: 4
- Cucumber: 1/2, sliced
- Bell Pepper: 1/2, sliced
Instructions
- Combine spinach, avocado, yogurt, lemon juice, garlic, and herbs in a blender.
- Blend until smooth, adding water if needed.
- Season with salt and pepper.
- Spread the green goddess dressing on tortillas.
- Fill with cucumber and bell pepper.
- Wrap and enjoy!
