- 0.5 lb lean ground beef
- 1 cup fresh spinach leaves
- 1 medium carrot, julienned
- 2 large eggs
- 2 tbsp gochujang (Korean chili paste)
- 1 tbsp soy sauce
- 2 tsp sesame oil
- 1 tsp brown sugar
- 1 clove garlic, minced
- 1 tsp vegetable oil
- 1 tsp toasted sesame seeds
- 1 green onion, sliced
Instructions
- Mix gochujang, soy sauce, 1 teaspoon sesame oil, sugar, and minced garlic in a small bowl.
- Heat a skillet over medium-high heat.
- Cook ground beef until browned and fully cooked.
- Drain excess fat from the pan.
- Stir half of the sauce mixture into the beef.
- Remove beef from the pan and set aside.
- Add vegetable oil to the skillet.
- Sauté carrots and spinach for 2 minutes until slightly soft.
- Fry eggs in the pan until whites set but yolks remain runny.
- Scoop warm rice into two bowls.
- Arranged beef, carrots, and spinach over the rice.
- Place a fried egg on top of each bowl.
- Drizzle with remaining sauce and the rest of the sesame oil.
- Garnish with sesame seeds and green onions before serving.

- Substitute ground turkey or firm tofu for a different protein.
- Add sliced cucumbers or bean sprouts for extra crunch.
