- 1 baguette, sliced into 1/2-inch rounds
- 1 cup garlic cloves, peeled
- 1 cup olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- Place garlic cloves in a small saucepan. Cover with olive oil.
- Cook over low heat for 30-40 minutes, or until garlic is soft and lightly golden. Do not brown.
- Remove garlic from oil. Mash with a fork. Stir in salt and pepper.
- Arrange baguette slices on a baking sheet.
- Toast in the oven for 5-7 minutes, or until lightly golden.
- Rub each warm toast slice with a mashed garlic clove.
- Spread a generous amount of the garlic confit mixture onto each toast.
- Garnish with fresh parsley.
