Quick and flavorful noodles tossed in a spicy garlic chili oil sauce.
Ingredients

- 200g noodles (spaghetti, ramen, or udon)
- 3 cloves garlic, minced
- 1–2 tbsp chili flakes
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tsp sesame oil
- 2 tbsp neutral oil (like vegetable or canola)
- Optional: chopped scallions, sesame seeds for garnish
Instructions
- Cook noodles according to package directions. Drain and set aside.
- In a heatproof bowl, combine minced garlic and chili flakes.
- Heat neutral oil in a small pan until shimmering. Carefully pour hot oil over garlic and chili flakes. It will sizzle.
- Stir in soy sauce, rice vinegar, sugar, and sesame oil. Mix well.
- Add the cooked noodles to the sauce. Toss to coat evenly.
- Garnish with scallions and sesame seeds if desired. Serve immediately.
Notes
- Adjust chili flakes to your spice preference.
- You can add other seasonings like a pinch of salt or white pepper.
- For a richer flavor, use Sichuan chili flakes.
