Description

Quick and flavorful noodles tossed in a spicy garlic chili oil sauce.


Ingredients

  • 200g noodles (spaghetti, ramen, or udon)
  • 3 cloves garlic, minced
  • 12 tbsp chili flakes
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 2 tbsp neutral oil (like vegetable or canola)
  • Optional: chopped scallions, sesame seeds for garnish

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. In a heatproof bowl, combine minced garlic and chili flakes.
  3. Heat neutral oil in a small pan until shimmering. Carefully pour hot oil over garlic and chili flakes. It will sizzle.
  4. Stir in soy sauce, rice vinegar, sugar, and sesame oil. Mix well.
  5. Add the cooked noodles to the sauce. Toss to coat evenly.
  6. Garnish with scallions and sesame seeds if desired. Serve immediately.

Notes

  • Adjust chili flakes to your spice preference.
  • You can add other seasonings like a pinch of salt or white pepper.
  • For a richer flavor, use Sichuan chili flakes.
