Instructions
- In a large bowl, combine the grated vegetables, flour, cornstarch, egg, milk, baking powder, salt, pepper, and parsley. Mix until well combined.
- Heat about 1/2 inch of vegetable oil in a large skillet over medium heat.
- Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of a spoon. Do not overcrowd the pan.
- Cook for 3-4 minutes per side, or until golden brown and cooked through.
- Remove the fritters from the skillet and place them on a plate lined with paper towels to drain excess oil.
- Serve warm with your favorite dipping sauce.
