Ingredients

- 1 block (14 oz) firm or extra-firm tofu, pressed and cubed
- 2 tablespoons cornstarch
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 2 cups cooked rice
- 1 cup mixed vegetables (e.g., broccoli florets, sliced carrots, bell peppers)
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- In a bowl, toss the pressed tofu cubes with cornstarch until evenly coated.
- In a separate small bowl, whisk together soy sauce, sesame oil, rice vinegar, ginger, and garlic.
- Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil (if needed).
- Add the coated tofu to the skillet and cook until golden brown and crispy on all sides, about 8-10 minutes.
- Add the mixed vegetables to the skillet and stir-fry for 3-5 minutes until tender-crisp.
- Pour the soy sauce mixture over the tofu and vegetables. Stir to coat and cook for another minute until the sauce thickens slightly.
- Serve the crispy tofu and vegetable mixture over cooked rice.
- Garnish with sliced green onions and sesame seeds.
Notes
- For extra crispy tofu, ensure it is well-pressed to remove excess water.
- Feel free to customize vegetables based on your preference.
- Add a pinch of red pepper flakes for a spicy kick.
