Instructions
- Preheat your oven to 400°F (200°C).
- Boil the baby potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes well.
- Place the drained potatoes on a baking sheet lined with parchment paper.
- Gently smash each potato with the bottom of a glass or a potato masher, flattening them to about 1/2 inch thickness.
- Drizzle the smashed potatoes with olive oil.
- Season with salt, pepper, and any optional seasonings.
- Bake for 25-35 minutes, or until the edges are golden brown and crispy.
- Serve hot.
