Amazing Creamy Spinach Pasta in 30 Minutes

Description

A quick and easy pasta dish with a rich and creamy spinach sauce.


Ingredients

  • 1 pound pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  3. Add the squeezed dry spinach to the skillet and cook for 2-3 minutes, stirring occasionally.
  4. Pour in the heavy cream and bring to a simmer. Cook for 5 minutes, stirring, until the sauce thickens slightly.
  5. Stir in the Parmesan cheese until melted and smooth. Season with salt and black pepper.
  6. Add the drained pasta to the skillet with the sauce. Toss to coat. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  7. Serve immediately.

Notes

  • For a lighter sauce, you can substitute half-and-half for heavy cream.
  • Add cooked chicken or shrimp for a complete meal.
  • A pinch of nutmeg can enhance the flavor of the spinach.
