Instructions
- Preheat your oven to 400°F (200°C).
- Remove the husks and silk from the corn.
- Slice each ear of corn lengthwise into four equal pieces, resembling ribs.
- In a small bowl, whisk together olive oil, chili powder, garlic powder, smoked paprika, salt, and pepper.
- Brush the corn ribs evenly with the seasoned oil mixture.
- Arrange the corn ribs in a single layer on a baking sheet.
- Bake for 20-25 minutes, flipping halfway through, until the corn is tender and slightly browned.
- Serve hot with your favorite toppings.
Notes
- For crispier ribs, you can broil them for the last 1-2 minutes, watching carefully to prevent burning.
- Adjust the spice level by adding more or less chili powder or a pinch of cayenne pepper.
- Experiment with different spice blends like cumin, onion powder, or Italian seasoning.
