Ingredients

- 1 tablespoon coconut oil
- 1 shallot, minced
- 1 clove garlic, minced
- 1 cup jasmine rice, rinsed
- 1 (13.5 ounce) can full-fat coconut milk
- 1/2 cup water
- 1/2 teaspoon salt
- 1 tablespoon fresh lime juice
- 2 tablespoons chopped fresh cilantro (optional)
Instructions
- Heat coconut oil in a medium saucepan over medium heat.
- Add minced shallot and cook until softened, about 2-3 minutes.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add rinsed jasmine rice to the saucepan and stir to coat with the oil.
- Pour in coconut milk, water, and salt. Bring to a boil.
- Once boiling, reduce heat to low, cover, and simmer for 15-18 minutes, or until all liquid is absorbed and rice is tender.
- Remove from heat and let stand, covered, for 5 minutes.
- Fluff the rice with a fork. Stir in fresh lime juice and cilantro (if using).
- Serve warm.
Notes
- Rinsing the rice helps to remove excess starch, resulting in fluffier grains.
- Adjust the amount of lime juice to your preference.
- For extra flavor, you can add a pinch of red pepper flakes with the shallots.
