Ingredients

  • 1 shallot, minced
  • 1 clove garlic, minced
  • 1 cup jasmine rice, rinsed
  • 1 (13.5 ounce) can full-fat coconut milk
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Heat coconut oil in a medium saucepan over medium heat.
  2. Add minced shallot and cook until softened, about 2-3 minutes.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add rinsed jasmine rice to the saucepan and stir to coat with the oil.
  5. Pour in coconut milk, water, and salt. Bring to a boil.
  6. Once boiling, reduce heat to low, cover, and simmer for 15-18 minutes, or until all liquid is absorbed and rice is tender.
  7. Remove from heat and let stand, covered, for 5 minutes.
  8. Fluff the rice with a fork. Stir in fresh lime juice and cilantro (if using).
  9. Serve warm.

  • Rinsing the rice helps to remove excess starch, resulting in fluffier grains.
  • Adjust the amount of lime juice to your preference.
