Description

These delicious chocolate coconut bars feature a rich, fudgy chocolate topping over a sweet, chewy coconut base. They are easy to make and perfect for a sweet treat.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 (14 ounce) can sweetened condensed milk
  • 2 cups shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine flour, softened butter, and granulated sugar. Mix until crumbly. Press this mixture evenly into the bottom of the prepared baking pan.
  3. Bake for 10-12 minutes, or until lightly golden.
  4. While the crust bakes, in another bowl, combine sweetened condensed milk and shredded coconut. Mix well.
  5. Spread the coconut mixture evenly over the baked crust.
  6. Bake for an additional 20-25 minutes, or until the coconut is golden brown.
  7. Remove from oven and let cool slightly.
  8. In a small saucepan over low heat, combine chocolate chips and heavy cream. Stir until smooth and melted. Remove from heat and stir in vanilla extract.
  9. Pour the chocolate mixture evenly over the coconut layer.
  10. Refrigerate for at least 2 hours, or until the chocolate is set.
  11. Lift the bars out of the pan using the parchment paper overhang. Cut into squares and serve.

Notes

  • For easier cutting, chill the bars thoroughly before slicing.
  • You can use dark chocolate chips for a richer chocolate flavor.
  • Store leftover bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
  • To toast the coconut for extra flavor, spread it on a baking sheet and bake at 325°F (160°C) for 5-7 minutes, stirring occasionally, until golden brown.
