These delicious chocolate coconut bars feature a rich, fudgy chocolate topping over a sweet, chewy coconut base. They are easy to make and perfect for a sweet treat.

- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1 (14 ounce) can sweetened condensed milk
- 2 cups shredded coconut
- 1 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a medium bowl, combine flour, softened butter, and granulated sugar. Mix until crumbly. Press this mixture evenly into the bottom of the prepared baking pan.
- Bake for 10-12 minutes, or until lightly golden.
- While the crust bakes, in another bowl, combine sweetened condensed milk and shredded coconut. Mix well.
- Spread the coconut mixture evenly over the baked crust.
- Bake for an additional 20-25 minutes, or until the coconut is golden brown.
- Remove from oven and let cool slightly.
- In a small saucepan over low heat, combine chocolate chips and heavy cream. Stir until smooth and melted. Remove from heat and stir in vanilla extract.
- Pour the chocolate mixture evenly over the coconut layer.
- Refrigerate for at least 2 hours, or until the chocolate is set.
- Lift the bars out of the pan using the parchment paper overhang. Cut into squares and serve.
Notes
- For easier cutting, chill the bars thoroughly before slicing.
- You can use dark chocolate chips for a richer chocolate flavor.
- Store leftover bars in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
- To toast the coconut for extra flavor, spread it on a baking sheet and bake at 325°F (160°C) for 5-7 minutes, stirring occasionally, until golden brown.
