- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons jerk seasoning
- 1 tablespoon olive oil
- 1 cup cooked rice
- 1/2 cup cooked black beans, rinsed and drained
- 1/2 cup chopped pineapple
- 1/2 cup diced red bell pepper
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Toss chicken pieces with jerk seasoning, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Add chicken and cook until browned and cooked through, about 5-7 minutes.
- In a bowl, combine cooked rice, black beans, pineapple, red bell pepper, and red onion.
- Add cooked chicken to the bowl.
- Drizzle with lime juice and sprinkle with cilantro.
- Toss gently to combine.
- Serve immediately.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the chicken.
- You can substitute chicken with firm tofu or shrimp.
- Serve with a side of your favorite hot sauce if desired.
