A simple and comforting pasta dish featuring sweet caramelized onions, garlic, and a creamy sauce.
Ingredients

- 1 pound pasta
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 1/2 cup dry white wine (optional)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, until deeply caramelized, about 20-30 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- If using, pour in white wine and scrape up any browned bits from the bottom of the pan. Let it simmer for 2 minutes.
- Stir in heavy cream and Parmesan cheese. Season with salt and pepper.
- Add the drained pasta to the skillet. Toss to coat with the sauce. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
- Serve immediately, garnished with fresh parsley.
Notes
- For sweeter onions, cook them over low heat for a longer period.
- You can add a pinch of red pepper flakes for a little heat.
- Other cheeses like Gruyere or Pecorino Romano can be used instead of Parmesan.
