A delicious plant-based alternative to pulled pork, made with tender jackfruit simmered in smoky BBQ sauce.

- 2 cans (20 oz each) young green jackfruit in brine, drained and rinsed
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup your favorite BBQ sauce
- 2 tablespoons apple cider vinegar
- 1 tablespoon brown sugar (optional)
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
Instructions
- Shred the jackfruit: Drain and rinse the jackfruit. Remove any tough core pieces and seeds. Shred the jackfruit with your hands or two forks until it resembles pulled meat.
- Sauté aromatics: Heat olive oil in a large skillet or pot over medium heat. Add chopped onion and cook until softened, about 5-7 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Add jackfruit and sauce: Add the shredded jackfruit to the skillet. Stir in BBQ sauce, apple cider vinegar, brown sugar (if using), and smoked paprika.
- Simmer: Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 20-30 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the sauce.
- Season: Season with salt and black pepper to taste.
- Serve: Serve hot on buns, over rice, or as desired.
Notes
- For a crispier texture, you can spread the cooked jackfruit on a baking sheet and broil for a few minutes until slightly browned.
- Adjust the sweetness and spice of the BBQ sauce to your preference.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
