Ingredients

  • 1 pound pasta
  • 2 ripe avocados, pitted and scooped
  • 1/2 cup fresh basil leaves
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt to taste
  • Black pepper to taste
  • Optional: Red pepper flakes

Instructions

  1. Cook pasta according to package directions. Reserve about 1 cup of pasta water before draining.
  2. While pasta cooks, combine avocados, basil, pine nuts, garlic, olive oil, and lemon juice in a food processor.
  3. Process until smooth and creamy.
  4. Add salt and pepper to taste.
  5. In a large bowl, combine the drained pasta with the avocado pesto.
  6. Add reserved pasta water, a little at a time, until the sauce reaches your desired consistency.
  7. Serve immediately. Garnish with red pepper flakes if desired.

Notes

  • For a richer flavor, toast the pine nuts before adding them to the food processor.
